  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine the milk, vegetable oil, egg, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined.
  5. Fill each muffin cup halfway with the batter. Spoon a tablespoon of jelly into the center of each muffin cup. Top with more batter to cover the jelly.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the muffins comes out clean.
  7. Remove from the oven and let the muffins cool in the tin for 5 minutes. Transfer to a wire rack to cool completely.
