Preheat the oven to 400°F (200°C).

Wash the potatoes and pat them dry. Pierce each potato several times with a fork.

Rub the potatoes with olive oil and sprinkle with salt. Place them on a baking sheet.

Bake the potatoes for 40-45 minutes, or until they are tender when pierced with a fork.

Remove the potatoes from the oven and let them cool slightly.

Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin layer of potato on the skin.

Place the potato skins back on the baking sheet, skin side down.

Fill each potato skin with shredded cheddar cheese and sun-dried tomatoes.

Bake for another 10 minutes, or until the cheese is melted and bubbly.
