Jam & Buttercream Sandwich Cookies

In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Divide the dough in half and shape each portion into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Roll out one portion of the dough to about 1/4 inch thickness on a lightly floured surface.

Use a round cookie cutter to cut out an even number of cookies.

Place half of the cookies onto the prepared baking sheet.

Spoon a small amount of jam onto the center of each cookie on the baking sheet.

Place the remaining cookies on top of the jam-covered cookies, pressing gently to create sandwich cookies.

Bake for 10-12 minutes or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

In a small bowl, whisk together powdered sugar and milk to make the buttercream filling.

Spread a dollop of buttercream on the bottom side of one cookie and sandwich with another cookie.

Repeat with the remaining cookies.
