  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. Divide the dough in half and shape each portion into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Roll out one portion of the dough to about 1/4 inch thickness on a lightly floured surface.
  8. Use a round cookie cutter to cut out an even number of cookies.
  9. Place half of the cookies onto the prepared baking sheet.
  10. Spoon a small amount of jam onto the center of each cookie on the baking sheet.
  11. Place the remaining cookies on top of the jam-covered cookies, pressing gently to create sandwich cookies.
  12. Bake for 10-12 minutes or until the edges are lightly golden.
  13. Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  14. In a small bowl, whisk together powdered sugar and milk to make the buttercream filling.
  15. Spread a dollop of buttercream on the bottom side of one cookie and sandwich with another cookie.
  16. Repeat with the remaining cookies.
