Individual Raspberry Cobblers
Cobblers are a popular dessert in the southern United States and are often made with seasonal fruits like peaches or berries.

Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the flour, sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Stir in the milk and vanilla extract until just combined.

In a separate bowl, toss the raspberries with cornstarch and lemon juice.

Divide the raspberry mixture among four ramekins. Spoon the cobbler batter over the raspberries.

Place the ramekins on a baking sheet and bake for 25 minutes, or until the cobbler topping is golden brown.

Remove from the oven and let rest for 5 minutes.

Serve warm with a scoop of vanilla ice cream on top.
