  1. Preheat the oven to 325°F (160°C). Crush the chocolate cookies in a food processor until fine crumbs form.
  2. Melt the butter and mix it with the cookie crumbs. Press the mixture into the bottom of individual mini cheesecake pans.
  3. In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition.
  4. Melt the semi-sweet chocolate and fold it into the cream cheese mixture. Pour the mixture over the prepared crusts.
  5. Bake for 20-25 minutes, or until the cheesecakes are set. Remove from the oven and let them cool in the pans for 10 minutes.
  6. Transfer the cheesecakes to a wire rack and let them cool completely. Refrigerate for at least 2 hours before serving.
  7. Serve with whipped cream on top.
