Impossible Garden Pie
The name ‘Impossible Garden Pie’ comes from the fact that the pie magically holds together without a crust, making it seem impossible!

Preheat the oven to 350°F (175°C) and grease a pie dish.

In a large bowl, combine the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

In a separate bowl, beat the eggs and milk together. Gradually add the egg mixture to the flour mixture, stirring until just combined.

Fold in the zucchini, yellow squash, carrots, red bell pepper, green onions, cheddar cheese, Parmesan cheese, basil, parsley, salt, and black pepper.

Pour the mixture into the greased pie dish and smooth the top.

Bake for 40-45 minutes or until the top is golden brown and the center is set.

Remove from the oven and let it rest for 10 minutes before serving.
