Hungry Girl’s Veg-Meatball Stuffed Pita

Preheat the oven to 375°F (190°C).

Place the veg-meatballs on a baking sheet and bake for 20-25 minutes, or until heated through.

While the veg-meatballs are baking, prepare the pita bread by heating it in a toaster or oven until warm.

In a small bowl, mix together the olive oil, lemon juice, garlic powder, salt, and black pepper to make a dressing.

In a separate bowl, combine the cucumber, tomato, red onion, and lettuce.

Once the veg-meatballs are done baking, remove them from the oven and let them rest for 5 minutes.

Cut each pita bread in half and spread 1 tablespoon of hummus inside each half.

Stuff each pita half with 2 veg-meatballs and a portion of the cucumber, tomato, red onion, and lettuce mixture.

Drizzle the dressing over the stuffed pitas.
