In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.

In a separate bowl, mix together the milk, sugar, melted butter, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Gently fold in the diced peaches.

Heat vegetable oil in a deep pan or fryer to 350°F (175°C).

Drop spoonfuls of the doughnut batter into the hot oil and fry until golden brown, about 2-3 minutes per side.

Remove the doughnuts from the oil and place them on a paper towel-lined plate to drain excess oil.

In a small bowl, mix together the melted white chocolate and coconut flakes.

Dip each doughnut into the white chocolate-coconut glaze, allowing any excess to drip off.
