Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

In a large bowl, combine the flour, sugar, baking soda, salt, and cinnamon. Mix well.

Add the oil, eggs, vanilla extract, pineapple, bananas, and chopped pecans to the dry ingredients. Stir until just combined.

Divide the batter evenly among the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Transfer the cakes to a wire rack to cool completely.

In a separate bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

Place one cake layer on a serving plate and spread a layer of cream cheese frosting on top. Repeat with the remaining layers.

Garnish the cake with chopped pecans. Refrigerate for at least 1 hour before serving.
