Hubbard Squash Pie

Preheat the oven to 425°F (220°C).

Cut the Hubbard squash in half, remove the seeds, and place it cut-side down on a baking sheet. Bake for 45-60 minutes, or until the squash is tender. Let it cool.

Scoop out the flesh of the squash and measure 2 cups.

In a large bowl, combine the squash, granulated sugar, brown sugar, cinnamon, ginger, nutmeg, salt, eggs, and evaporated milk. Mix well.

Pour the mixture into the pie crust.

Bake in the preheated oven for 15 minutes. Then reduce the heat to 350°F (175°C) and bake for an additional 40-45 minutes, or until the filling is set.

Remove from the oven and let it cool for at least 1 hour before serving.
