Carrots are a great source of beta-carotene, which is converted into vitamin A in the body and helps promote good vision.

Preheat the oven to 350°F (175°C).

In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.

In a separate bowl, beat the eggs, honey, vegetable oil, and vanilla extract until well combined.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Fold in the grated carrots and chopped walnuts.

Spoon the batter into muffin cups lined with paper liners.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
