Preheat the oven to 350°F (175°C).

In a large bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract.

In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.

Bake for 10-12 minutes or until golden brown.

Allow the cookies to cool completely on a wire rack.

In a medium bowl, beat together the powdered sugar, marshmallow creme, unsalted butter, and vanilla extract until smooth and creamy.

Spread the filling onto the flat side of half of the cookies and top with the remaining cookies to make sandwiches.
