French macaroons are said to have been introduced in France by Catherine de’ Medici’s Italian pastry chefs in the 16th century.

  1. Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, sift together the almond flour and powdered sugar.
  3. In a separate bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue to beat until stiff peaks form.
  4. Gently fold the almond flour mixture into the egg whites until fully combined. Add the food coloring and mix until evenly colored.
  5. Transfer the mixture into a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheet.
  6. Tap the baking sheet on the counter to release any air bubbles. Let the macaroons rest for 30 minutes.
  7. Bake for 15 minutes, or until the macaroons are set and have a slight crust.
  8. Remove from the oven and let cool completely.
  9. Once cooled, pipe a small amount of buttercream filling onto one macaroon and sandwich with another macaroon.
  10. Repeat with the remaining macaroons.
  11. Serve and enjoy!
