Preheat the oven to 350°F (175°C).

Place the chocolate chip cookies on a baking sheet.

Take a scoop of vanilla ice cream and place it on the bottom side of a cookie.

Top the ice cream with another cookie, pressing down gently to create a sandwich.

Repeat steps 5-7 for the remaining cookies and ice cream.

Place the ice cream sandwiches in the freezer for at least 2 hours to firm up.
