Chop the bittersweet or white chocolate into small pieces.

In a saucepan, heat the heavy cream, whole milk, granulated sugar, vanilla extract, and salt over medium heat until it begins to steam.

Remove the saucepan from heat and add the chopped chocolate. Stir until the chocolate is completely melted and the mixture is smooth.

Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
