Preheat the oven to 325°F (160°C).

In a large mixing bowl, combine rolled oats, almonds, walnuts, pumpkin seeds, and sunflower seeds.

In a separate small bowl, whisk together honey, melted coconut oil, vanilla extract, and cinnamon.

Pour the honey mixture over the dry ingredients and mix until well combined.

Spread the mixture evenly on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown.

Remove from the oven and let it cool completely on the baking sheet.

Once cooled, mix in dried cranberries.
