  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
  6. Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  7. Flatten each ball with the bottom of a glass or a cookie stamp.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool completely on a wire rack.
  10. In a small bowl, whisk together the powdered sugar and vegetable shortening to make the filling.
  11. Spread the filling on the bottom side of half of the cookies.
  12. Top with the remaining cookies to make sandwiches.
  13. Let the cookies rest for 30 minutes before serving.
