In a large bowl, cream together the butter and powdered sugar until light and fluffy.

Add the vanilla extract and salt, and mix well.

In a separate bowl, whisk together the all-purpose flour and instant espresso powder.

Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.

On a lightly floured surface, roll out the dough to about 1/4 inch thickness.

Use heart-shaped cookie cutters to cut out cookies and place them on the prepared baking sheet.

Bake for 12-15 minutes, or until the edges are lightly golden.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
