Healthy Tofu Cheesecake Made in a Rice Cooker

Drain and press tofu to remove excess water.

In a food processor, blend tofu, cream cheese, honey, lemon juice, and vanilla extract until smooth.

In a separate bowl, mix almond flour, oats, coconut oil, and maple syrup to make the crust.

Press the crust mixture into the bottom of a greased rice cooker pot.

Pour the tofu mixture on top of the crust.

Cook in the rice cooker on the steam setting for 40 minutes.

Once cooked, let the cheesecake rest in the rice cooker for 2 hours.

Remove the cheesecake from the rice cooker and refrigerate for at least 4 hours.

Serve chilled with fresh berries on top.
