Pie Cookies (Pie-Kies)
Ingredients
Instructions
-
In a large bowl, whisk together the flour, granulated sugar, and salt.
-
Add the cold cubed butter to the bowl and use a pastry cutter or your fingers to cut the butter into the dry ingredients until it resembles coarse crumbs.
-
In a small bowl, whisk together the egg and vanilla extract. Pour the egg mixture into the large bowl with the dry ingredients and butter. Mix until the dough comes together.
-
Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
-
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
-
On a lightly floured surface, roll out one disk of dough to a 1/8-inch thickness. Use a round cookie cutter to cut out circles.
-
Place half of the circles onto the prepared baking sheet. Spoon a small amount of fruit jam or pie filling onto each circle.
-
Use a smaller cookie cutter to cut out a decorative shape in the center of the remaining circles. Place the circles with the cut-out shape on top of the jam-filled circles.
-
Press the edges of the cookies together to seal in the filling.
-
Bake for 12-15 minutes, or until the edges are lightly golden.
-
Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
-
Dust the cooled cookies with powdered sugar before serving.
