Pie cookies, also known as hand pies, have been enjoyed for centuries and are a portable and delicious treat.

  1. In a large bowl, whisk together the flour, granulated sugar, and salt.
  2. Add the cold cubed butter to the bowl and use a pastry cutter or your fingers to cut the butter into the dry ingredients until it resembles coarse crumbs.
  3. In a small bowl, whisk together the egg and vanilla extract. Pour the egg mixture into the large bowl with the dry ingredients and butter. Mix until the dough comes together.
  4. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. On a lightly floured surface, roll out one disk of dough to a 1/8-inch thickness. Use a round cookie cutter to cut out circles.
  7. Place half of the circles onto the prepared baking sheet. Spoon a small amount of fruit jam or pie filling onto each circle.
  8. Use a smaller cookie cutter to cut out a decorative shape in the center of the remaining circles. Place the circles with the cut-out shape on top of the jam-filled circles.
  9. Press the edges of the cookies together to seal in the filling.
  10. Bake for 12-15 minutes, or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
  12. Dust the cooled cookies with powdered sugar before serving.
