Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the pumpkin puree, coconut milk, maple syrup, eggs, cinnamon, nutmeg, ginger, and salt. Mix well.

In a separate bowl, combine the almond flour and coconut oil to make the crust. Press the crust mixture into a pie dish.

Pour the pumpkin mixture into the crust.

Bake in the preheated oven for 50-60 minutes, or until the center is set.

Remove from the oven and let it cool for 2 hours.

In a food processor, blend the pecans, dates, and vanilla extract to make the pecan topping.
