Healthy Makeover: Green Bean Casserole
The traditional green bean casserole is often made with canned cream of mushroom soup and fried onions, but this healthy makeover version uses fresh ingredients and is gluten-free.

Preheat the oven to 375°F (190°C).

Trim the ends of the green beans and blanch them in boiling water for 3 minutes. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add mushrooms, onion, and garlic. Sauté until mushrooms release their moisture and onions are translucent.

In a small bowl, whisk together almond flour, vegetable broth, nutritional yeast, dried thyme, salt, and black pepper.

Add the almond flour mixture to the skillet and stir until thickened.

Stir in the blanched green beans.

Transfer the mixture to a casserole dish and bake for 20-25 minutes, or until bubbly and golden on top.
