Hamantashen are traditionally eaten during the Jewish holiday of Purim, which commemorates the salvation of the Jewish people from the villain Haman.

  1. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  2. Cut in the butter until the mixture resembles coarse crumbs.
  3. In a separate bowl, beat the eggs and vanilla extract.
  4. Add the egg mixture to the flour mixture and mix until the dough comes together.
  5. Divide the dough into 2 equal portions, wrap in plastic wrap, and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. On a lightly floured surface, roll out one portion of the dough to about 1/8 inch thickness.
  8. Using a round cookie cutter or glass, cut out circles of dough.
  9. Place a spoonful of fruit preserves in the center of each circle.
  10. Fold the sides of the circle up to form a triangle, pinching the corners to seal.
  11. Place the filled triangles onto the prepared baking sheet.
  12. Repeat steps 7-11 with the remaining dough and filling.
  13. Bake for 12-15 minutes, or until the edges are lightly golden.
  14. Allow the hamantashen to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
