  2. Add onion, green bell pepper, celery, and garlic. Saute until the vegetables are softened, about 5 minutes.

  4. Gradually add vegetable broth, stirring constantly.
  5. Add thyme, oregano, paprika, cayenne pepper, salt, and black pepper.
  6. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
  7. Meanwhile, wash and chop the collard greens, mustard greens, turnip greens, and spinach.
  8. Add the greens to the pot and simmer for an additional 20 minutes, or until the greens are tender.
  9. Serve the gumbo z'herbes over cooked rice.
