Preheat the grill to medium heat.

In a cast iron skillet, melt the butter over medium heat. Stir in the brown sugar until dissolved.

Arrange the pineapple slices in the skillet, overlapping if necessary. Place a maraschino cherry in the center of each pineapple slice.

In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Stir in the melted butter, milk, vanilla extract, and egg until well combined.

Pour the batter over the pineapple slices in the skillet.

Place the skillet on the grill and close the lid. Cook for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
