In a large bowl, combine the flour, granola, baking powder, cinnamon, and salt.

In a separate bowl, whisk together the eggs, brown sugar, vegetable oil, applesauce, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Spoon the batter into a greased muffin tin, filling each cup about 3/4 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
