Preheat grill to medium heat.

In a large pot, boil the potatoes until tender. Drain and let cool.

In a small bowl, whisk together olive oil, minced garlic, Dijon mustard, white wine vinegar, fresh dill, salt, and black pepper.

Cut the cooled potatoes into bite-sized pieces and place them in a large bowl.

Add the sliced red onion to the bowl.

Pour the dressing over the potatoes and onion, and gently toss to coat.

Grill the potato mixture for about 5 minutes, until lightly charred.

Remove from the grill and let rest for 10 minutes.

Serve the grilled-garlic potato salad warm or at room temperature.
