Green tomato cake is a traditional Southern dessert that was created as a way to use up unripe tomatoes before they spoiled.

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a blender or food processor, puree the green tomatoes until smooth.

In a large mixing bowl, combine the pureed tomatoes, sugar, oil, eggs, and vanilla extract. Mix well.

In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the walnuts.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
