Boil the potatoes until tender, then mash them.

In a pan, sauté the spinach until wilted.

In a bowl, combine the mashed potatoes, sautéed spinach, crumbled goat cheese, and chopped sundried tomatoes. Season with salt and black pepper.

Place a spoonful of the potato mixture onto an eggroll wrapper. Fold in the sides and roll up tightly.

Heat vegetable oil in a frying pan. Fry the eggrolls until golden brown and crispy.

Remove from heat and let them rest for 5 minutes.
