Preheat a grill or grill pan over medium heat.

In a small bowl, combine olive oil, salt, and black pepper.

Brush one side of each tortilla with the olive oil mixture.

Place the tortillas, oiled side down, on the grill or grill pan.

Crumble the feta cheese over one half of each tortilla.

Top with sliced red onion, sliced tomato, kalamata olives, and fresh basil.

Fold the tortillas in half to create a quesadilla.

Grill for 2-3 minutes on each side, until the tortillas are crispy and the cheese is melted.

Remove from the grill and let rest for 5 minutes.
