Bahamian Macaroni and Cheese

Preheat the oven to 350°F (175°C).

Cook the macaroni according to the package instructions, then drain and set aside.

In a large saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until softened.

Stir in the flour, mustard powder, nutmeg, salt, and black pepper. Cook for 1-2 minutes, stirring constantly.

Slowly whisk in the milk and cook until the mixture thickens.

Remove the saucepan from the heat and stir in the grated cheddar cheese and half of the grated Parmesan cheese until melted.

Add the cooked macaroni to the cheese sauce and mix well.

Transfer the macaroni and cheese mixture to a greased baking dish.

Sprinkle the remaining Parmesan cheese on top.

Bake for 25-30 minutes, or until the top is golden and bubbly.
