  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, whisk together the flour, granola, baking powder, cinnamon, and salt.
  3. In a separate bowl, beat the eggs. Add the grated carrots, vegetable oil, honey, and vanilla extract. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients. Stir until just combined. Fold in the chopped walnuts.
  5. Pour the batter into the prepared loaf pan. Smooth the top.
  6. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Slice and serve.
