Preheat the oven to 180°C (350°F).

Roll out the pie crust and place it in a pie dish.

In a saucepan, combine the sugar, cornstarch, and salt. Gradually whisk in the water.

Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

Remove from heat and stir in the butter until melted.

In a separate bowl, whisk the eggs. Gradually whisk in the hot sugar mixture.

Zest and juice the lemons, then add the zest and juice to the egg mixture. Stir until well combined.

Pour the filling into the pie crust.
