Preheat the oven to 350°F (175°C).

In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

Add the spinach to the skillet and cook until wilted.

In a mixing bowl, beat the eggs and milk together. Stir in the cooked spinach mixture, cheddar cheese, breadcrumbs, salt, and black pepper.

Pour the mixture into a greased baking dish.

Bake in the preheated oven for 35-40 minutes, or until the souffle is set and golden brown on top.

Let it rest for 10 minutes before serving.
