Preheat the oven to 375°F (190°C).

Peel and slice the potatoes, chop the broccoli, carrots, onion, and garlic.

In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until fragrant.

Add the broccoli and carrots and cook for 5 minutes.

In a baking dish, layer the sliced potatoes, sautéed vegetables, and dairy-free cheese.

In a small bowl, whisk together almond milk, salt, and pepper. Pour the mixture over the casserole.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, or until the potatoes are tender and the cheese is melted and golden.
