Roasting cauliflower brings out its natural sweetness and enhances its flavor.

Preheat the oven to 425°F (220°C).

Cut the cauliflower into florets and place them on a baking sheet.

Drizzle the olive oil over the cauliflower and season with salt and black pepper.

Toss to coat the cauliflower evenly.

Roast in the preheated oven for 20-25 minutes, or until the cauliflower is golden brown and tender.

Remove from the oven and sprinkle with Parmesan cheese.

Return to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.

Remove from the oven and garnish with fresh parsley.
