In a food processor, pulse the gingerbread cookies until finely ground.

In a mixing bowl, combine the ground gingerbread cookies, cream cheese, powdered sugar, cinnamon, ginger, and cloves. Mix well.

Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper.

Place the truffles in the refrigerator and let them rest for at least 1 hour.

Once the truffles are firm, dip them in melted white chocolate and return them to the baking sheet.
