In a food processor, pulse the gingersnap cookies until finely ground. Transfer to a mixing bowl.

Add cream cheese, powdered sugar, ground ginger, cinnamon, and nutmeg to the bowl. Mix until well combined.

Roll the mixture into small balls, about 1 inch in diameter. Place on a parchment-lined baking sheet.

Chill the truffles in the refrigerator for 1 hour.

In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring in between, until smooth.

Dip each truffle into the melted white chocolate, allowing any excess to drip off. Return to the baking sheet.

Sprinkle the finely chopped candied ginger on top of each truffle.

Place the truffles back in the refrigerator to set the chocolate.
