Instructions

  1. In a medium bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt. Set aside.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Add the molasses, egg, and vanilla extract, and mix until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. On a lightly floured surface, roll out one disk of dough to a 1/4-inch thickness. Use gingerbread people cookie cutters to cut out shapes and transfer them to the prepared baking sheet.
  7. Bake for 8-10 minutes, or until the edges are lightly browned. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. Repeat with the remaining dough.
  9. Once the cookies are completely cooled, prepare the icing by mixing the icing sugar with a little water until it reaches a spreadable consistency. Add food coloring if desired.
  10. Decorate the gingerbread people cookies with the icing and let them set before serving.
