Cheesecake is believed to have originated in ancient Greece, where it was served to athletes during the first Olympic games as a source of energy.

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the flour and lemon zest.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 55-60 minutes or until the center is set. Remove from the oven and let cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cheesecake from the pan.
  6. Refrigerate for at least 2 hours or overnight.
  7. Before serving, top the cheesecake with fresh mixed berries and sprinkle with powdered sugar.
  8. Slice and serve chilled.
