In a bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.

In a separate bowl, combine the diced apples, sugar, cinnamon, and lemon juice.

Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter.

Dip each crepe into the beaten egg and place it in the skillet.

Cook for about 1 minute on each side until golden brown.

Remove the crepe from the skillet and repeat with the remaining crepes.

Spread a spoonful of the cream cheese mixture onto each crepe.

Spoon the apple mixture onto one half of each crepe and fold it in half.

Return the filled crepes to the skillet and cook for an additional 2-3 minutes on each side.

Serve warm and sprinkle with powdered sugar.
