Fruit Filled Cheesecake

Preheat the oven to 325°F (163°C).

In a medium bowl, combine graham cracker crumbs and melted butter. Press onto the bottom of a 9-inch (23 cm) springform pan.

In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition. Stir in flour.

Pour the cream cheese mixture over the crust in the springform pan.

Bake for 55-60 minutes or until the center is set and the top is lightly browned.

Remove from the oven and let it cool in the pan for 10 minutes.

Run a knife around the edge of the pan to loosen the cheesecake.

Remove the sides of the pan and let the cheesecake cool completely.

Once cooled, top with assorted fruits and sprinkle with powdered sugar.

Refrigerate for at least 2 hours before serving.
