Poke cupcakes are named after the Hawaiian dish ‘poke’, which means ‘to slice’ or ‘cut into pieces’. The concept of filling cupcakes with a sweet filling was inspired by the traditional poke dish.

Preheat the oven to 350°F (175°C). Line a cupcake pan with paper liners.

In a medium bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate large bowl, beat the butter until creamy. Add the eggs, one at a time, beating well after each addition. Stir in the milk and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fill each cupcake liner about two-thirds full with the batter. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cupcakes from the oven and let them cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Once the cupcakes are cooled, use the back of a wooden spoon to poke a hole in the center of each cupcake.

Fill each hole with strawberry jam.

In a small bowl, whisk together the powdered sugar and milk to make the frosting.

Spread the frosting over the cupcakes, covering the jam-filled holes.

Top each cupcake with sliced fresh strawberries.
