  2. Add chopped onion, carrot, and garlic to the pan. Stir-fry for 3-4 minutes until the vegetables are slightly softened.
  3. Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until cooked through.
  4. Add the cooked rice, frozen peas, soy sauce, salt, and black pepper to the pan. Stir-fry for another 3-4 minutes until everything is well combined and heated through.
  5. Remove from heat and garnish with chopped spring onions.
  6. Let the fried rice rest for 5 minutes before serving.
