Preheat the oven to 425°F (220°C). Slice the green tomatoes into 1/4-inch thick slices.

In a shallow bowl, mix together the flour, cornmeal, salt, black pepper, and cayenne pepper.

In a separate bowl, whisk together the egg and milk.

Dip each tomato slice into the egg mixture, then coat with the flour mixture.

Heat the vegetable oil in a large skillet over medium-high heat. Fry the tomato slices in batches until golden brown, about 2-3 minutes per side. Transfer to a paper towel-lined plate.

Place the fried tomato slices on a baking sheet. Top each slice with a sprinkle of cheddar cheese.

Bake in the preheated oven for 5 minutes, or until the cheese is melted and bubbly.
