  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk together the egg yolks and vanilla extract. Gradually add the egg mixture to the flour mixture, stirring until the dough comes together.
  4. Divide the dough into 6 equal portions and press each portion into a tart pan.
  5. In a separate bowl, toss the sliced peaches with cornstarch until coated.
  6. Arrange the peach slices on top of the tart crusts.
  7. In a small saucepan, heat the apricot preserves and water over low heat until melted. Brush the mixture over the peaches.
  8. Bake the tarts for 25 minutes or until the crust is golden brown.
  9. Allow the tarts to cool for 10 minutes before serving.
