Heat butter and olive oil in a large pot over medium heat. Add onions and cook until caramelized, about 30 minutes.

Sprinkle flour over the onions and stir for 1 minute.

Pour in red wine and cook for 2 minutes, scraping the bottom of the pot.

Add beef broth, bay leaves, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

Preheat the broiler. Ladle the soup into oven-safe bowls.

Top each bowl with a slice of French baguette and sprinkle with Gruyere cheese.
