Red Thai Coconut Risotto
Risotto is a traditional Italian dish, but this recipe adds a Thai twist with the use of red curry paste and coconut milk.

In a large pan, heat some oil and add the red curry paste. Stir-fry for a minute.

Add the Arborio rice and stir-fry for another minute.

Slowly pour in the coconut milk and vegetable broth, stirring constantly.

Bring the mixture to a simmer and let it cook for about 20 minutes, stirring occasionally.

Add the red bell pepper and green beans, and cook for an additional 5 minutes.

Remove from heat and let it rest for 5 minutes.
