  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, mix together quinoa, black beans, corn, tomatoes, red onion, jalapeno, cheddar cheese, cilantro, lime juice, olive oil, salt, and pepper.
  4. Stuff the bell peppers with the quinoa mixture.
  5. Place the stuffed peppers on a baking dish and bake for 30 minutes.
  6. Remove from the oven and let rest for 10 minutes.
  7. Serve hot and enjoy!
