  1. Prepare the sponge cake and let it cool. Cut the sponge cake into two layers. Place one layer of sponge cake at the bottom of a cake ring. Spread a layer of pastry cream on top of the sponge cake. Arrange fresh strawberries on top of the pastry cream. Place the second layer of sponge cake on top. Prepare the gelatin by soaking the gelatin sheets in cold water. Heat the water in a saucepan and dissolve the gelatin in it. Let the gelatin mixture cool slightly and then pour it over the top layer of sponge cake. Refrigerate the cake for at least 3 hours to set. Once the cake has set, remove the cake ring. Whip the cream with powdered sugar and almond extract. Pipe the whipped cream around the edges of the cake. Decorate the top of the cake with fresh strawberries. Serve and enjoy!
